Diwali Special Rasgulla


                          RASGULLA

Welcome Back Homies! 1st of all I would love to wish all my viewers a Very HAPPY DIWALI, it's a day of lights and Colours, So For this special Day I have also executed a Special Bengali Sweet which is RASGULLA. It is the national food Of west Bengal "the City Of Joy". I am personally attached to this Sweet because I'm Bengali and Rasgulla is actually necessary in our home. So it is Sweet which is Made out of Milk Chhena ( Unripened Curd Cheese ), and then added to Sweet Sugar syrup (chashni), so it is widely consumed in India and Eating this sweet in DIWALI WITH FRIENDS AND FAMILY would give a great impact on everybody . It is healthy as it is made of Milk but in limit because it has High Calorific Value.

Calorific Value :- 35 Kcal.

  So Let's Jump Into The Ingredients :
   ● 1 Liter Full Cream Milk.
   ● 1 1/2 Lemon Juice.
   ● 1 1/2 Cups of Sugar.
   ● 3 Cups of Water.

Servings :- 10 Rasgullas can be prepared.

Let's start to prepare Chhena :-
 Switch on the flame ,  Then take 1 liter of Full cream Milk in a bowl and boil it. Once the milk is boiled we going to add the 1 1/2 lemon juice into the milk so that it the milk gets curdled  and converts into Chhena. So 1 1/2 lemon juice is enough for preparing Chhena. Once Chhena is done we can notice that Chhena gets separated from water.


Now we are going to drain the water from the Chhena using a colander or sieve. And then take a muslin cloth to train the water completely, hang the muslin cloth in sink ( preferably ) for 10 - 20 min max and later squize the rest of the water gently ( apply minimum force ). When the water is completely drained keep it in rest position for 10 min.

Now Let us prepare Sweet Sugar Syrup   (Chasni ) :-


Take 1 1/2 cups of Sugar and water should be exact double the amount of sugar ( 3 cups ). And 2 cardamoms , Switch on the flame take a bowl add the ingredients and stir it properly ( Note :- for Rasgulla The sugar syrup shouldn't be thick enough ).
It'll take roughly 7 - 8 min to boil , so we are going to continue with the Chhena, Take the chhena and add Samolina / sooji ( 1 tsp ) and make roll it, kneed the Chhena and fill all the gaps by kneeding it properly. Now when the Chhena is properly rolled we are going to make 10 small balls out of it, roll the balls properly and then set the balls into the Sugar Syrup ( add when the syrup is boiling). And then cover the bowl for 5 min on high flame and then stir it again using a spoon and again cover it with lead and let it boil on simmering temperature for 10 -15 min. Once the Rasgulla is done it'll double the size , the Rasgullas are ready now just we have to bring to room temperature and then usually it'll take 30 min to penetrate into room temperature and then it'll be ready to get served. So this was the recipe for very Famous Rasgulla just prepare this at home in this ospicious day and enjoy with all your Family and Friend.
