DUCK IN ORANGE SAUCE
● Duck in orange sauce or Duck à l'orange, or canard à l'orange, in French. So basically it's a French dish , but the Italian claims that the dish was their origin and later on the recipe traveled to France. An Italian Poet wrote a poem where he mentioned how the dish traveled to Paris. Actually guys I love France and their people and also the different kinda food they prepare and serve. French chef
Auguste Escoffier gave us knowledge to cater people professionally. The way of creating a dish is always unique , so this was little knowledge I have about this Dish .
● It can be a bit lengthy process as we are using a little hard meat. So Let's start with marinating the Duck, here I have used whole duck you can use drum stick , or breast piece anything you like the most.
● Make small cuts into the the duck so that we can coat a proper marination. After marinating the duck keep it in the fridge whole night ( it's up to you, you can also keep it for 1 hour). The next day take out the duck and add little sauted Vegetables which ever you like so I have used green beans, cherry tomatoes , broccoli and baby celery. Sauté all of them and get a baking tray add little oil to the surface and arrange the duck and saute vegetables properly.
● Keep the duck into the oven at 280 ℃ for 2 - 3 hours or more. We can check the duck if it is cooked by looking at the colour once the duck gets cooked it changes it's colour golden and then golden brown.
● So if the duck is cooked take it out of the oven and keep the duck in a plate. And make jux out of the fats which is left by the duck , by just simply simmer the duck juice in a pan until it gets thick, once the juice gets thick add the orange juice into it and let it simmer for 2 min , the at last we can use it as a sauce to pour over the duck. So this is how DUCK IN ORANGE SAUCE.
