Hello Everyone I am Chef Siddhartha and welcome back to my Website. Today's dish is Nawab Special dish , we are going to learn to prepare Awadhi Mutton Biryani. So basically Awadhi is another name of Lucknow which is also called as "Nawabo ka Sheher" because Lucknow was greatly influenced by the Mughals. Lucknow is a City in Utter Pradesh a State in India, this dish is very famous from the Mughal Dynasty and is Called as "Nawabo Ki Birayani" thus this dish is prepared with great care. We are going to prepare the Biryani with CARE, we have to remove most of the bone from the Meat, after the Meat gravy is prepared for the Biryani we have to take out all the garam masala spices ( Cinnamon, Cloves, Black Pepper Corns, Cardamom, Bay leaf, etc.) because the Nawabs didn't want any disturbance while eating the Biryani thus it is made with special care.
So let's start with Ingredients for Biryani:-
● Mutton (500 gm).
● Basmati Rice / Indian long Rice (1 kg).
● Curd ( 50 - 75 gm).
● Bay leaf. ( Tej patta)
● Cinnamon. ( Dalchini)
● Black Pepper Corns. ( Kali mirch k dane)
● Cloves ( lavang).
● Green Cardamom ( Hari elaichi).
● Star Anis.
● Javitri.
● Kewda Essence.
● Rose Water.
● Ginger Garlic Paste.
Let us know how to prepare Mutton gravy:-
● For Mutton gravy we have to marinate the mutton with some of the great spices. The spices are • garam masala, • black pepper powder, • red chilli powder, • biryani spice, • Turmeric Powder, • oil, • salt, • Curd, • ginger garlic paste, and at last we have to add little lime juice. Take 500 gm of Mutton wash it properly and marinate with all the spices and curd and leave it for whole night in fridge. And the next day we are going to take the Marinated Mutton out of the fridge and start to cook it. Take a big pot / handi , add oil into it and wait till the oil gets hot , then add ginger and garlic paste and fry it, add the hot spices (garam masala) like bay leaf , cinnamon, javitri, black pepper corn, cloves, and green cardamom, and roast all the ingredients a bit (do not burn it can produce a bitter taste), then add chopped onions (optional), then add the marinated mutton and stir well to fry the mutton from all possible sides, then add Biryani masala to it. Let the mutton cook for 15 min just periodically stir the mutton, and cover it with lead. After 15 - 20 min add roughly chopped tomatoes and stir it properly so that the tomato can release it's juices, it'll take hardly 2 min then switch off the flame and cover the mutton with lead for 10 min. Now what we are going to do is take Pressure Cooker add all the ingredients and then add 4 cups of water in the pressure cooker and then cover it. Now let the mutton cook in the pressure cooker for atleast 50 min to 1 hour ( almost 6 whistles). At last when the mutton is cooked properly we have to add Garam masala (indian hot spice) Till the mutton is getting ready we are going to start with the Rice
Now let us start to prepare the Rice -
Take another pot / handi and fill it up with water and add black pepper corn, cinnamon sticks, cardamom and star anise and let it boil in the gas. Take a bowl add 1 kg of rice and wash it properly and Soak it in water for 10 min. Once the water is boiled we are going to add the Soaked Rice in to it and cover it with lead until the rice cooks properly. Wait till the rice is cooked.
Now start to prepare the Awadhi Biryani-
Once the mutton is cooked properly spread it in a tray and remove the bone as well as the Garam masala spice out of the gravy, we have to repeat the same step with the Rice to remove the Cardamom, Black Pepper Corns, Cinnamon Stick and star anise, then spread in tray and add Saffron water, green and yellow food colour to increase eye appeal. Then take a large pot / handi we have to make several layers of Mutton and Rice from bottom to top, first at the bood pur a layer of mutton then the layer of rice, repeat till the top and at last add the plain white rice with some Cashew nuts, Almonds, Coriander Leaf, Deep fried onion ring , etc. So we have to now cover the rim of the handi / pot with wheat flour dough and then put the lead so that the air cannot travel and the biryani can be cooked with pressure. And this is how the final product looks like.
So this is how the famous Awadhi Mutton Biryani is prepared , garnish the biryani with Coriander leaf, Nuts and fried onion slices ( barista), this should be enjoyed with whole family, eating the special Awadhi Biryani will literally make you feel Nawab.
